About us

One family, one rice mill, a craft done well.

The company RISO DUGHI S.R.L. has been registered with the Novara Business Register since 3 January 1983. But for the brothers Gualberto and Gianbattista Dughi, rice goes back even further: rice millers in Cerano for over forty years, they were honoured by Confartigianato Novara in 2019 for 35 years in business together.

We are a family-run business that has grown while staying true to its region. We buy paddy rice and cereals, then process and pack them at our Via Prati Nuovi facility, supplying professional customers who rely on them for their work. A small team, large volumes, and a commitment we stand by.

Our rice

Rice rooted in Novara's tradition

Cerano lies in the Vercelli–Novara–Pavia rice-growing district, which produces 81% of Italy's rice. The varieties of this land shape our work.

Our process

Four steps.
One rice mill.

From paddy rice to the finished grain, all under one roof. We oversee every stage, from arrival at the mill to packing.

  1. 01

    Intake and weighing

Paddy rice arrives at the mill, where it is weighed on the weighbridge and checked before storage.

  2. 02

    Husking

We remove the husk, the grain's outer shell. This turns paddy rice into brown rice.

  3. 03

    Milling

We remove the bran and outer layers to the required degree, selecting and checking the grain.

  4. 04

    Packing

We pack rice at the mill and prepare it for delivery to customers in Italy and Europe.

Our region

Where Italian rice took root: a patchwork sea

Cerano overlooks the Ticino River in Bassa Novarese, a land of water that locals call the “patchwork sea”: flooded rice fields become endless mirrors of water in spring.

The earliest letter documenting rice cultivation in the Po Valley dates to 1475 and was written in Cassolnovo, now a neighbouring municipality of Cerano, across the river. The cradle of European rice growing is just a few kilometres from here.
